SDH (EC 1.1.1.14) catalyzes the dehydrogenation of sorbitol to form fructose, which is one of the key enzymes that regulate the content of sorbitol in organisms.
SDH catalyzes the dehydrogenation of sorbitol to produce fructose, and at the same time reduces NAD+ to produce NADH. SDH activity can be calculated by measuring the increase rate of absorbance at 340nm.
