S-PPO is mainly derived from the decomposition and release of soil microorganisms, plant root exudates, and animal and plant residues. It catalyzes the oxidation of aromatic compounds in the soil to quinones, and quinones react with proteins, amino acids, sugars, minerals and other substances in the soil. Organic matter and pigments complete the cycle of soil aromatic compounds and are used for soil environmental remediation.

S-PPO can catalyze pyrogallol to produce purple gallate, which has characteristic light absorption at 430nm.
