Amylose is a polysaccharide chain linked by alpha-(1,4) glycosidic linkages of D-glucose. The content of amylose affects the eating quality and appearance quality of food, and food safety is closely related.

Amylose and iodine form a blue complex. Ethanol is used to separate the soluble sugar and starch in the sample, and then iodine is used to react with it to obtain the amylose content.
