alpha-Amylase Activity Assay kit (iodine-starch colorimetry)
Amylase is responsible for the hydrolysis of starch, including alpha-amylase and beta-amylase. alpha-Amylase (EC 3.2.1.1) can randomly act on alpha-1,4-glycosidic bonds in starch. It produces reducing sugars such as glucose, maltose, maltotriose, and dextrin, while reducing the viscosity of starch, so it is also called liquefaction enzyme. alpha-Amylase catalyzes the hydrolysis of alpha-1,4 glycosidic bonds in starch molecules to produce glucose, maltose and dextrin. Iodine can be combined with unhydrolyzed starch.
